What runs underneath
It sells seats, not covers. Six suites turn on a booking clock your team runs, the flame line and the smoker hold all night in the center cabin, and the stairs and walkways are engineered and certified for the traffic before anyone climbs them. Your crew learns the blade, the timing and the turn. Fire, cold and the crowd line are solved before the first guest arrives.

The polished trunk lid rises in one slow motion and breathes a low ribbon of cold vapor over the ice, mother-of-pearl spoons catching the light as the first pour goes out on the sideline.

What runs underneath
One host, two hours, no kitchen behind them. The lid, the ice bed, the pour and the reset are choreographed so a single person holds the sideline through a full match. Cold chain solved. Under an hour to set, and it packs down into the car it arrived in.

The Longest Pull: a guest sinks a long brass oar-fork into the lagoon, then rises and stands tall, lifting a single rope of cheese as high as their arm will reach, backlit so the string glows molten gold against the dark; the mast leaderboard clocks the pull in feet, and the night's record is engraved into the hull.
Known for the glowing rope of cheese pulled higher than anyone dared, and a record burned into the hull forever.
What runs underneath
Your team runs it, not ours. We rehearse the pull until it lands the same height every seating, and the lagoon holds all night without a babysitter. Then the leaderboard takes over. Nobody pulls once. The night's record goes into the hull, and they come back next season to beat it.

Your team runs it. The round is built from what this group actually drinks, so the cart shows up loaded instead of taking orders. We train the read and the route, the ice block gets cut and tapped on site, and pacing stays measured so the party never gets ahead of the duty of care.
Smoke & Pestle
The hour the smoke drops.
A wall of live fire sealed behind glass, filling with smoke all afternoon and revealed on the hour in a falling curtain: charred cabbages, blistered peppers, whole pumpkins and wheels of cheese running gold, while margaritas are pressed live at the pass.

The clock does the selling. The vault fills all afternoon so the room watches shapes build behind the haze, then the drop runs on a posted time your team hits without us. Everything goes on early, margaritas are pressed to order at the pass, and the reset is invisible because the vault never opens between services. It plates for every diet in the room, so nobody at the table gets left out.
